I’LL LEAVE YOU THE SECRET! HOMEMADE CHRISTMAS CAKE
Homemade and full of tradition
Ingredients:
6 eggs
300g white sugar
270g melted butter
30ml oil (for moisture)
Zest of 1 orange
1 tablespoon vanilla extract
190ml milk at room temperature
580g all-purpose flour
25g baking powder
350g candied fruit
Preparation:
In a bowl, beat the eggs with the sugar until light and fluffy.
Add the melted butter and oil. Beat for another minute.
Fold in the orange zest, vanilla, and milk. Gently mix with a spatula or a hand mixer.
Sift the flour with the baking powder.
Add the flour in two parts, gently folding it in without overmixing.
Add the candied fruit (no need to flour it) and mix with a gentle, immersing motion.
Pour the batter into four 14 x 8.5 x 6 cm rectangular pans and one 10 cm round pan, all previously greased and floured.
Scatter more candied fruit on top for a rustic and festive touch.
Bake in a preheated oven at 160°C (325°F) for 30-35 minutes, or until a skewer inserted into the center comes out clean.
Let cool for 10 minutes in the pan, then turn out onto a wire rack.
