HOMEMADE EMPANADAS AND TARTS WITH TWO DELICIOUS FILLINGS

🌼 FILLING 1: Pineapple Jam

Ingredients:

  • 1 piece of pineapple, diced into small cubes
  • 1 piece of pineapple, blended in a blender (without water)
  • Juice of 2 lemons (adjust to taste)
  • 1 1/2 cups of sugar
  • 3 tablespoons of cornstarch

Preparation:

  1. In a saucepan, place the diced and blended pineapple.
  2. Cook over high heat for a few minutes.
  3. Add the lemon juice and sugar.
  4. Dissolve the cornstarch in a little water and add it to thicken.
  5. Cook until it reaches a jam-like consistency. Let it cool.

🍮 FILLING 2: Walnut Pastry Cream

Ingredients:

  • 100 ml water
  • 1 small piece of cinnamon stick
  • 2 cups milk (divided)
  • 1 packet of walnut-flavored cornstarch
  • Sugar to taste

Preparation:

  1. Boil the water with the cinnamon stick. Remove the cinnamon stick.
  2. Add 1 cup of milk.
  3. In another cup of milk, dissolve the packet of walnut-flavored cornstarch.
  4. Add this mixture to the saucepan and cook, stirring constantly.
  5. Add sugar to taste until thickened (if it’s too runny, add a little more cornstarch).
    It should have the texture of creamy whipped cream.

🥟 DOUGH BASE

Ingredients:

  • 1 kg all-purpose wheat flour
  • 250 g vegetable shortening
  • 1 can of Coca-Cola
  • (Optional) Sugar if you prefer a sweeter dough

Preparation:

  1. Mix the flour with the shortening until you have a sandy texture.
  2. Gradually add the Coca-Cola until you achieve a smooth, oily dough that doesn’t stick to your fingers.
  3. Let it rest for 10-15 minutes before using.

💛 ASSEMBLY

For Empanadas:

  1. Form small balls and flatten them with a tortilla press.
  2. Place a spoonful of filling in the center.
  3. Fold in half and seal the edge by gently pressing.
  4. Crimp the edges with a fork.

For Tarts:

  1. Use small aluminum molds.
  2. Cover the base with a circle of dough.
  3. Fill with 1 1/2 tablespoons of jam or cream.
  4. Cut strips of dough and arrange them in a lattice pattern on top.

Brushing and Baking:

  • Beat 1 egg and brush it over all the pastries before baking.
  • Bake at 180°C (350°F) for about 25 minutes, or until golden brown.
  • Optional: Sprinkle with sugar and cinnamon after baking.
